There are many nights where we've eaten heavy for a couple of days and just need something light and simple for supper. One of our standbys is a classic charcuterie platter. It's so easy to grab a few meats, cheeses, veggies and fruit and voila--a whole delicious meal!
We usually include some combination of the following:
- summer sausage, hard salami or prosciutto
- smoked gouda, brie, sharp cheddar or muenster
- cherry tomatoes
- carrots or celery
- crackers or a baguette
You could also make this to set out at a party because it's so pretty. And you almost always have leftovers to snack on later or throw into a salad. Yummy, healthy, and easy!
