so...i started drafting this post before lunch, but all the pictures of guac made me salivate so i had to stop and eat. but now we're back!
i just love guacamole. we make it a lot, and i think we have our recipe down. actually, it's more just general proportions than a recipe. we try to keep avocados, onions, and garlic stocked in the kitchen, so it's something we can throw together quickly. and luckily, living in southern california we have avocados year round!
what you need: (serves 2 people)
- 2 avocados
- 1/4 cup diced tomato
- 1/4 cup chopped onion
- 1 clove garlic, diced
- 1 tsp salt
- juice of 1/2 - 1 lime
some people use a food processor, but we are mashers. i like it smooth but a little chunky. like my men. (sorry, had to. totally joking.)
sometimes we add cilantro, or substitute red onions for white. you can also leave out tomatoes if you want. and shhh it's a secret, but i didn't have limes when i made this batch so i used lemon juice. not as good, but it'll do. and you better believe i used the ole pinterest trick to test the ripeness of the avocados.
also, having a qualified tester with a very refined guac palette helps get the balance right. thanks parker!
